Foxbard Beef Steers are processed in the Fall and Winter with quarters available on a reserved basis. All of our Angus beef is USDA approved. Beef is aged two weeks before cutting, then flash frozen and paper-wrapped to remain freezer safe for up to a year.
Typically a quarter from a 1000 lb steer will hang at 140 lbs and dress out at a finished weight of 95 – 105 lbs. Butchering is customized to fit individual orders based on the “Cut Sheet” linked below. Steaks may be cut 3/4″ to 1 1/4″ thick, while roasts can vary from 3 to 5 pounds in weight. Alternately, roasts* may be cut into steaks, stew meat or ground into hamburger, as preferred.
We offer our beef by the front or rear quarter and price it by hanging weight as follows:
Front quarter = $3.75/lb (hanging wt) Rear quarter = $4.00/lb (hanging wt)
